I fished out of a sit-inside yak for the first year and half that I owned a solo yak. Now that I have spent a few years fishing out of a sit-on-top, I can't go back. I wouldn't rule it out, but I would consider some sit-on-tops. At your size, it is going to be a little cramped.
In the SOT category, the Coosa and Cuda are both great boats. Some others are the Wilderness Systems Ride and Tarpon, Malibu Stealth, Native Ultimate or Manta Ray, or one of many more. You can find a lot of them for great deals used either here, on KBF, or Craigslist. Good luck!

I would look into the Old towne guide 119 canoe as well. It is a solo canoe. I paddle it with a 2 bladed kayak paddle and love it. I am a big guy too. 6-4 230. I have even messed around and learned to stand and fish from mine. It's nice to be able to sit up and reposition your legs. You can also modify it to fit your fishing needs. Check out some of the posts under watercraft forum to see what I mean.
Best thing to do is try some out to see what feels good for you. I fish with guys who all are very happy with most of what has already been mentioned.

I'm about your size and have no problems on my older tarpon 120. they sell em new around 500 but call it the perception pescador. I've paddled tarpon 100's also and havent had issues with size or weight.

I have a guide 119 i am also looking arond for a kayak for myself because come the end of july after the wife has the baby she is stealing my 119 haha so looking arond to see what is out there and getting help from the pros on here
